Hi Katy, The melted coconut oil in the ice cream creates a creamy texture! You could use olive oil in place of coconut oil, but we wouldn’t recommend omitting it entirely. Hope that helps!

Finally did. Pretty Amazing. Although, I cheated a little and used peanut butter instead of the date caramel date paste (did put it in the ice cream). My only question is related to the ice cream. Can the coconut oil be eliminated or reduced? Coconut flavor was a little overwhelming. Will post and tag to Instagram.
