Hi Lyn, Happy birthday! We hope you have a wonderful day! Did you mean to comment on a specific recipe? We may be able to offer more specific support if you can share which recipe. In general, chicken eggs will work for flax eggs. Use 1 chicken egg to replace 1 Tbsp flaxseed meal + 2 1/2 Tbsp water. Gluten-free flours are tricky! It’s best to use the specific flours recommended in each recipe. Coconut flour is going to be much more absorbent than almond flour or brown rice flour and will typically produce a more gritty and dense result. Hope that helps!

I blend my own rice flours in the Vitamix grain attachment, and use brown jasmine, which adds a subtle but nice flavor. Potato and tapioca starch are cheap if you have a good Asian grocer nearby.
